清蒸魚丸

[b]食材[/b]
魴魚或(新鮮魚片)2片
淬釀日式和風醬油露~鰹魚風味一大匙
紅蘿蔔,蔥絲適量
太白粉一大匙
調味
鹽少許
胡椒粉,米酒少許
柴魚粉隨意

[b]作法[/b]
1 將魚切成塊,用肉錘拍扁,再用刀剁成泥(也可用絞拌機打成泥)

2 [調味]拌勻後加太白粉,往一個方向打至起膠(打的時間越久,口感越好)

3 湯匙沾少許油或水,將魚漿用虎口擠成圓形

4 紅蘿蔔切片墊底,放上魚丸,稍做裝飾

5 大火蒸約4分鐘(看大小)

6 取出排盤,淋上[淬釀日式和風醬油露]提味,就完成了
